Abstract
papaya is one of fruit which han been recognized anf widesoread in Indonesia, This Fruit in used as food. beside fruits, other parts of papaya can be use for various advantages like for food and beverage, traditional herbal etc. Even since long time ago people often use papaya as softener of meat because papaya contain papain enzyme. Along time, papain enyme have been produced in industrial scale. demand of papain enzyme in the global market always increase, do farmer have wide opportunity in this sector. look at to the high potention of making and advantage rubber of papaya, we conduct research about what condition which influence drying process rubber of papaya which can be used by society
